Cucumber Raita

Yield: About 1 pint | Prep time: 20 minutes
Ingredients
1 large cucumber
2 Tbsp of mint, chopped
1 small jalepeño, minced
2 Tbsp basil, chopped
1 cup plain yogurt
½ tsp Garam Masala
Salt to taste
Instructions
Cut the cucumber into small pieces, about ¼ of a dice size.
Sprinkle with salt and let drain in a colander for 15 minutes
While cucumbers drain, mix together all remaining ingredients.
Add the cucumbers, then add salt to taste.

Chopped scallions
