Microgreens Pesto

A pesto made from local microgreens

Recipe from Deschutes Produce

Ingredients:

  • .9 oz garlic, minced

  • 6 oz Naturally Elevated Microgreens

  • 1/ 4 c Oil (unrefined, organic sunflower)

  • 1 / 4 c Parmesan Cheese (vegan = Nutritional yeast)

  • 1 / 2 c Sunflower seed, ground (any seed or nut)

  • 1/2 t Himalayan Sea Salt (any unrefined)

  • 1 Tbs Lemon Juice

 

Instructions:

  • In a food processor, Pulse Garlic.

  • Add Microgreens and pulse while slowly adding oil.

  • Once blended, add Parm, seeds & salt.

  • Blend more while slowly adding Lemon.
