Microgreens Pesto
A pesto made from local microgreens
Recipe from Deschutes Produce
Ingredients:
.9 oz garlic, minced
6 oz Naturally Elevated Microgreens
1/ 4 c Oil (unrefined, organic sunflower)
1 / 4 c Parmesan Cheese (vegan = Nutritional yeast)
1 / 2 c Sunflower seed, ground (any seed or nut)
1/2 t Himalayan Sea Salt (any unrefined)
1 Tbs Lemon Juice
Instructions:
In a food processor, Pulse Garlic.
Add Microgreens and pulse while slowly adding oil.
Once blended, add Parm, seeds & salt.
Blend more while slowly adding Lemon.
